We’ve spent the best part of a year turning 208 Hollywood Road into the kind of place we’d want to drink in ourselves. Bill’s opens on 1 December 2026, and here’s what to expect when the doors open.
The room
Red marble on the bar, terrazzo on the tables and a checkerboard floor that’s already seen a few staff dinners. There’s timber panelling, low light and a booth or two for settling in.
The kitchen
Pub classics from back home, done properly: Sydney rock oysters, a schnitzel that hangs off the plate, steaks off the grill and a pavlova we’ve tested more times than we’d like to admit.
