Who’s Bill?

Bill’s is named after the owner’s daughter. It’s a family name, not a concept, and that’s the point: we wanted a place that feels like it’s always been here.

Familiar, never nostalgic.

We took the things we love about the Australian pub (the warmth, the generosity, the sense that everyone’s welcome) and gave them a bistro’s attention to detail. We wanted Bill’s to feel discovered rather than designed, like it’s been part of Hollywood Road for years.

Built to be lived in.

Terrazzo tabletops, red marble, warm timber panelling and a checkerboard floor ready for plenty of good nights. Everything here was chosen to age well and get better with use, a bit like the regulars.
